Guadalupe “Cupi” Mendez McCoy passed away peacefully on Wednesday, July 30, 2025, at the age of 86. She was surrounded by her loving family.
Cupi McCoy was a beloved and devoted wife, mother and proud grandmother. She was a graduate of Martin High School. She worked numerous years for Laredo Independent School District in the Student Services Department. She also worked for Ward-Jackson Insurance Agency as well as Inscorp Inc.
Cupi was lively and outgoing but most of all loved traveling with her longtime friends. She was the life of every gathering and enjoyed celebrating birthdays and special family celebrations. Her favorite past times were weekly outings to the movies and playing Loteria.
She was preceded in death by her loving husband Eduardo R. McCoy, her parents, Fernando J. Mendez and Carmen M. Olivares, her son, Eduardo R. McCoy, Jr., son-in-law, Antonio Ramirez, and siblings Maria Gutierrez, Olga M. Flores, and Fernando J. Mendez, Jr.
Left to cherish her memory are her loving daughters, Geraldine “Gerri” Ramirez, Ana Lisa McCoy (Juan Jose Lazcano) and daughter-in-law, Laura Martinez McCoy, grandchildren, Antonio “Tony” Ramirez, Triana A. Ramirez, Eduardo A. McCoy, Jacob P. McCoy, Kaitlyn McCoy, Juan Jose “Jay Jay” Lazcano Jr., Anissa Lazcano Arredondo, Kasandra Lazcano Lopez, as well as numerous great grandchildren, nieces and nephews, longtime beloved friends and her bedside canine companion “Boss”.
She leaves behind a legacy of love, compassion, and resilience that will forever resonate in the hearts of those who knew her.
San Luis Rey Catholic Church
A memorial Mass will be held on Friday, August 8, 2025, at 9:00 AM at San Luis Rey Catholic Church, 3502 Sanders Ave., Laredo, TX. 78040.
Family and friends are encouraged to meet at church.
